Mother of Fussy Kids
I love to give my kids a healthy and substantial after school snack of baby carrots and homous.
Hommous:
On the stovetop, warm a can of chick peas on low, adding a little lime juice and a couple of healthy dashes of olive oil. (can add garlic too).
Once the chick peas are softened, begin adding any seasoning you fancy:
* garlic and sun dried tomatoes
* coriander and lime
* basil and Kalamata olives
Once all the ingredients are in the chick peas, using a hand blender, mix until smooth, adding yogurt to add moisture.
Serve with croudite for a healthy snack after school
